Ingredients
  

For the Wagyu Smash Burgers:

  • 1 lb Wagyu ground beef 80/20 fat ratio preferred
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • 4 brioche buns toasted
  • 4 slices cheese cheddar or American
  • 1 tablespoon butter for toasting buns

For the Burger Sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • 1 teaspoon pickle relish
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder

For Toppings:

  • ½ cup shredded lettuce
  • ¼ cup sliced pickles
  • ½ red onion thinly sliced
  • 1 tomato sliced

Instructions
 

Prepare the Burger Sauce:

  • In a small bowl, mix mayonnaise, ketchup, mustard, pickle relish, smoked paprika, and garlic powder.
  • Set aside in the fridge until ready to serve.

Form the Wagyu Patties:

  • Divide the Wagyu ground beef into 4 equal portions (about 4 oz each).
  • Lightly form into loose meatballs without overpacking.

Preheat the Skillet or Griddle:

  • Heat a cast iron skillet or griddle over high heat for at least 5 minutes.
  • Lightly grease with a small amount of butter or oil.

Smash the Patties:

  • Place each meatball onto the hot skillet.
  • Use a burger press or heavy spatula to press each patty firmly down until very thin.
  • Season with salt, black pepper, and garlic powder.

Cook the Burgers:

  • Let cook for 2 minutes without moving, until the edges become crispy.
  • Flip, immediately add cheese, and cook for another 1-2 minutes until melted.

Toast the Buns:

  • In a separate pan, melt butter and toast the brioche buns until golden brown.

Assemble the Burgers:

  • Spread burger sauce on the bottom bun.
  • Add lettuce, tomato, and pickles.
  • Place the cheese-covered Wagyu patty on top and add sliced red onions.
  • Cover with the top bun and serve immediately.
