For the Wagyu Smash Burgers:
- 1 lb Wagyu ground beef 80/20 fat ratio preferred
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder optional
- 4 brioche buns toasted
- 4 slices cheese cheddar or American
- 1 tablespoon butter for toasting buns
For the Burger Sauce:
- ¼ cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard
- 1 teaspoon pickle relish
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
For Toppings:
- ½ cup shredded lettuce
- ¼ cup sliced pickles
- ½ red onion thinly sliced
- 1 tomato sliced
Prepare the Burger Sauce:
In a small bowl, mix mayonnaise, ketchup, mustard, pickle relish, smoked paprika, and garlic powder.
Set aside in the fridge until ready to serve.
Preheat the Skillet or Griddle:
Smash the Patties:
Place each meatball onto the hot skillet.
Use a burger press or heavy spatula to press each patty firmly down until very thin.
Season with salt, black pepper, and garlic powder.
Cook the Burgers:
Let cook for 2 minutes without moving, until the edges become crispy.
Flip, immediately add cheese, and cook for another 1-2 minutes until melted.
Assemble the Burgers:
Spread burger sauce on the bottom bun.
Add lettuce, tomato, and pickles.
Place the cheese-covered Wagyu patty on top and add sliced red onions.
Cover with the top bun and serve immediately.
