Ingredients
  

For the Salmon:

  • 4 salmon fillets 6 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika

For the Mushroom Sauce:

  • 2 tablespoons butter
  • 1 cup mushrooms sliced (button or cremini)
  • 2 cloves garlic minced
  • ½ cup chicken or vegetable broth
  • 1 cup heavy cream or coconut cream for dairy-free
  • ½ teaspoon dried thyme
  • ½ teaspoon red pepper flakes optional for spice
  • ½ cup Parmesan cheese grated
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

Step 1: Prepare & Season the Salmon

  • Pat salmon fillets dry and season with salt, pepper, garlic powder, and paprika.

Step 2: Cook the Salmon

  • Heat olive oil in a large skillet over medium-high heat.
  • Sear salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  • Remove salmon from the pan and set aside.

Step 3: Make the Mushroom Sauce

  • In the same pan, melt butter and sauté mushrooms for 3-4 minutes.
  • Add garlic, stirring for 30 seconds until fragrant.
  • Pour in broth, scraping up any bits from the pan.
  • Stir in heavy cream, thyme, and red pepper flakes.
  • Let simmer for 3-4 minutes, then mix in Parmesan cheese.

Step 4: Combine & Serve

  • Return salmon to the pan, spooning sauce over the fillets.
  • Simmer for 2 minutes to blend flavors.
  • Garnish with fresh parsley and serve hot.
