  • 4 salmon fillets 6 oz each
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • ½ cup black or green olives pitted and sliced
  • ¼ cup sun-dried tomatoes chopped
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley chopped
  • Juice of 1 lemon

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the seasoning: In a small bowl, mix olive oil, minced garlic, oregano, basil, red pepper flakes, salt, and black pepper.
  • Season the salmon: Place the fillets on the baking sheet and brush generously with the seasoned olive oil mixture.
  • Add toppings: Scatter cherry tomatoes, sun-dried tomatoes, and olives around the salmon.
  • Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  • Finish and serve: Remove from the oven, sprinkle with grated Parmesan cheese, chopped parsley, and a squeeze of fresh lemon juice.
  • Enjoy with roasted vegetables, pasta, or a side salad.
