- 1 lb ground beef
- 3 medium potatoes peeled and diced
- 1 small onion chopped
- 2 garlic cloves minced
- ½ teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese optional
- 2 tablespoons olive oil
- ¼ cup beef broth or water for moisture, optional
- Fresh parsley chopped (for garnish)
Cook Potatoes:
In a large skillet, heat 1 tablespoon olive oil over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until tender and golden. Remove and set aside.
Combine and Season:
Return potatoes to the skillet. Stir in paprika, oregano, salt, and pepper. Add broth if mixture seems dry. Cook for 5 more minutes.
