- 4 bone-in skinless chicken thighs
- 1 tablespoon vegetable oil
- 1 large onion chopped
- 3 cloves garlic minced
- 2 dried ancho chilies stemmed and seeded
- 2 dried guajillo chilies stemmed and seeded
- 2 tablespoons sesame seeds
- ¼ cup almonds
- 2 tablespoons raisins
- 1 corn tortilla or 2 slices of bread torn into pieces
- 2 medium tomatoes diced
- 2 cups chicken broth
- 2 ounces dark chocolate chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- Salt and pepper to taste   
Prepare the Chilies:
Toast the dried chilies in a dry skillet over medium heat until fragrant, about 2 minutes.
Soak the toasted chilies in hot water for 15 minutes, then drain.
Cook the Chicken:
Season the chicken thighs with salt and pepper.
In a large pot, heat the vegetable oil over medium heat.
Add the chicken and brown on all sides. Remove and set aside.  
Prepare the Mole Sauce:
In the same pot, add the chopped onion and cook until translucent.
Add the minced garlic, sesame seeds, almonds, and raisins. Cook for 2-3 minutes.
Add the torn tortilla pieces, diced tomatoes, soaked chilies, chicken broth, dark chocolate, ground cinnamon, and ground cumin.
Bring the mixture to a simmer and cook for 15 minutes.   
Blend the Sauce:
Allow the sauce to cool slightly, then transfer to a blender and blend until smooth.
Return the sauce to the pot and season with salt and pepper to taste.
Simmer the Chicken:
Return the browned chicken thighs to the pot with the mole sauce.
Simmer over low heat for 30-40 minutes, or until the chicken is cooked through and tender.
