Foil (for tenting chicken)
- 4 boneless skinless chicken breasts (about 6 oz each)
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 3 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 1 small onion finely chopped
- 2 cloves garlic minced
- 3 cups chicken broth
- ½ cup heavy cream
- 1 tablespoon fresh parsley chopped (optional, for garnish)
Prepare the Chicken:
In a shallow dish, combine the flour, garlic powder, onion powder, paprika, dried thyme, salt, and pepper.
Pat the chicken breasts dry with paper towels. Dredge each piece in the seasoned flour mixture, shaking off any excess.
Cook the Chicken:
Heat the vegetable oil in a large skillet over medium-high heat.
Add the coated chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Remove the chicken from the skillet and set aside, tenting with foil to keep warm.
Prepare the Gravy:
In the same skillet, reduce the heat to medium. Add the unsalted butter.
Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional 1 minute.
Sprinkle in 2 tablespoons of the remaining seasoned flour mixture, stirring constantly to form a roux. Cook for 1-2 minutes until the roux is golden brown.
Gradually whisk in the chicken broth, ensuring no lumps remain. Bring the mixture to a simmer and cook until the gravy thickens, about 5-7 minutes.
Stir in the heavy cream and cook for an additional 2 minutes.
Season the gravy with salt and pepper to taste.
Combine and Serve:
Return the cooked chicken breasts to the skillet, spooning the gravy over the top.
Simmer for 5 minutes to allow the flavors to meld.
Garnish with chopped fresh parsley, if desired.
Serve hot over mashed potatoes, rice, or biscuits.
