Ingredients
2 medium lemons, juiced
1-inch knob of fresh ginger, grated
2 tablespoons raw, unfiltered apple cider vinegar
1–2 teaspoons local honey (optional)
2 cups filtered water
Pinch of cayenne pepper (optional)
Instructions
1. Roll lemons to release juice. Slice and juice until you have 1/4 cup.
2. Grate fresh ginger; squeeze through cheesecloth for smoother texture (optional).
3. In a mason jar, combine lemon juice, ginger, vinegar, honey, cayenne, and water.
4. Seal and shake for 20 seconds until frothy.
5. Taste and adjust with honey or water if needed.
6. Chill for 10 minutes or serve warm by using lukewarm water instead.

Stick to 2 tablespoons vinegar to avoid harsh acidity.
