Description

Mexican Street Corn Dip is a creamy, spicy, and irresistible appetizer made with corn, chili-lime butter, and cotija cheese, perfect for parties and summer gatherings.

Ingredients

Scale

2 tablespoons chili powder

2 teaspoons smoked paprika

1/2–2 teaspoons cayenne pepper, to taste

2 tablespoons extra virgin olive oil

1 yellow onion, chopped

2 cups corn (fresh, grilled, or frozen)

2 cloves garlic, chopped

Kosher salt and black pepper, to taste

6 ounces cream cheese, softened

1/3 cup sour cream

4 tablespoons salted butter

1/3 cup olive oil mayo

2 tablespoons fresh lime juice

3/4 cup crumbled cotija cheese

1 ear grilled corn, kernels removed

1/4 cup fresh cilantro, chopped

Instructions

1. Mix chili powder, smoked paprika, cayenne, and salt in a small bowl.

2. Heat olive oil in a skillet. Sauté chopped onion until soft, about 5 minutes.

3. Add corn and garlic, sprinkle 1 tsp spice mix, and cook for another 5 minutes.

4. Reduce heat to low. Stir in cream cheese until melted. Mix in sour cream until creamy.

5. In another skillet, melt butter. Stir in remaining spice mix and chili flakes. Cook 1 minute and remove from heat.

6. In a bowl, mix mayo and lime juice with a pinch of salt.

7. Spoon the warm corn dip into a shallow bowl. Top with grilled corn kernels.

8. Drizzle lime mayo and spicy butter over the top.

9. Sprinkle with cotija cheese and fresh cilantro. Serve warm with tortilla chips.

Notes

Adjust cayenne for desired spice level.

Substitute cotija with feta or Parmesan if unavailable.

Use frozen corn for convenience, or grill for added smokiness.

Store leftovers in the fridge for up to 4 days and reheat gently before serving.
