- 1½ pounds fresh green beans
- 16 ounces cremini mushrooms
- 3 cups whole milk
- 1½ cups French fried onions
- ¼ cup all-purpose flour
- ½ cup grated Parmesan cheese
- 2 tablespoons tamari
- 4 garlic cloves
- 2 tablespoons fresh thyme leaves
- 1½ teaspoons Dijon mustard
Instructions
- Preheat your oven to 375°F.
- Melt 4 tablespoons of unsalted butter in a skillet.
- Sauté 1 pound of chopped mushrooms until golden.
- Mince 2 cloves of garlic.
- Sprinkle 3 tablespoons of all-purpose flour to make a roux.
- Whisk in 1 cup whole milk and ¾ cup chicken stock.
- Add 2 teaspoons of Dijon mustard and 1 tablespoon Worcestershire sauce.
- Trim the ends of 2 pounds of green beans.
- Blanch in boiling water for 3-4 minutes and transfer to ice water.
- Combine the green beans with the mushroom sauce.
- Layer the mixture in a 9×13-inch baking dish.
- Cover with foil and bake for 20-25 minutes.
- Remove the foil and sprinkle crispy onion topping.
- Bake for an additional 5-7 minutes until golden brown.
Notes
For the best taste, use fresh green beans and crispy onions. This casserole can be made ahead and stored in the fridge for up to four days.
